I've a soccer blog which is updated with the latest new, match previews/reviews and highlights.
So, obviously, it doesnt have timeless content and apart from the player biographies, only the last 2 posts are worth reading generally.
Any tips on how I could do off-site SEO for it?

Can you give some more info about the blog
You say that only 2 posts are worth reading - can you clarify what you mean by this?
Is the blog about a particular soccer team or league?

To be honest I wouldn't concern yourself too much with SEO side of things, as long as there's relevant title, meta tags within the blog, it should get found for at least a few keywords relating to the team in question. I blogged during the world cup with little or no SEO more than that, and got 1500 a day during it. I would recommend getting
What I would concentrate more on is getting readers. You mentioned you will be doing match previews and reviews. I would try and give a subjective slant on things ("I think they will win", "he was struggling today") as one thing football fans are (as I'm speaking as one) is subjective.
Also, try giving your opinion on some of the stories on offer. Not a day goes by that a big thing happens in the English Premiership. Give your thoughts of it, to get people coming back.
Two of my favourite footballing blogs are The Beautiful Game (http://stillbeautiful.wordpress.com/) (who is written by a good friend of mine, who wouldn't know his meta tag from his metatarsal ;)) and Who Ate All The Pies (http://www.whoateallthepies.tv/). You couldn't do much worse learning from them.

Yes it is about ManUtd, though I do try to include premiership news now and then too.
What I meant was that only the latest posts on a news/reviews blogs are worth reading, coz the other get outdated really soon.

Thanks for the great advice Rhys :D. I'm already using All-In-One SEO plugin, so hopefully that will take care of the meta tags.
I realize that I'm getting too formal with my posts, and have to remind myself that a blog is all about personal opinion.
Thanks for the links too -I'm surprised I havent seen them before.
