is it possible to create dropdown menus from the top horizontal nav bar? is this part of the theme or do i look elsewhere? if it is part of the theme, How do i do this?

yes it is possible. I would recommend adapting a menu from a site such as http://www.dynamicdrive.com/.

I have seen themes, that place category names in the top nav, automatically place sub categories in a drop down menu below each main category . Maybe this is what evony is asking about.

I'd recommend the Suckerfish dropdowns from HTMLDog (http://htmldog.com/articles/suckerfish/dropdowns/) which can easily be adapted for either vertical dropdowns or horizontal flyouts. However, whichever system you choose you'll need to know how to integrate it into your template.

I use most of wordpress templates and some of them have the drop down menu built in them
